COD SEASON – NIKLAS EKSTEDT
Niklas joins us as guest chef in March for cod season, bringing his inimitable style of cooking over flames to Holmen’s own wood pile. His restaurant Ekstedt opened in Stockholm in 2011 with a fire pit, a wood fired oven and wood stove – with no electricity, no gas but acquiring a Michelin star in no time for his exquisite cooking. He has travelled the world inspiring the next generation of chefs with his naturalistic wood wizardry.
The smells of charcoal and fish we have experienced in Niklas’ cooking will certainly see our guests twisting their napkins in anticipation of the first course. With the remarkable migration of cod into the waters of Lofoten, we’re thrilled that Niklas will be in control, one who turns all ingredients into a seasonal carousel of magic. So come and catch your cod and hand it over to our Swedish genius.

MIDNIGHT SUN – NUNO MENDES
We couldn’t be happier to have Nuno joining us as guest chef in June for the summer solstice. He’s quite simply an exceptional chef who never fails to surprise by pushing boundaries and creating immersive experiences.
Portugese by birth, he has really made his mark on the London restaurant scene with big hitters like The Loft Project, Viajante, Chiltern Firehouse and Mãos. He continues to be a total inspiration and his ideas for Kitchen On The Edge are already blowing us away. In June he’ll be cooking in our open kitchen, presenting an outdoor cooking demo and joining us on our adventures around the coast and around Lofoten. Nuno’s sleight of hand and response to the immediate natural larder around him will see him fizzing with even more ideas.
Nuno is sure to bring things to the table that are both poetic and delicious, almost as if he has lifted a small natural vignette of wild Lofoten and delicately taken it to the plate. Exciting food both bold and tender we look forward to every forkful

AUTUMNAL EQUINOX – HUGH FEARNLEY-WHITTINGSTALL
To list all Hugh’s awards and achievements here just wouldn’t be possible, there are too many. Campaigner, broadcaster, writer, champion of all things seasonal, sustainable and local he is a much loved food personality.
After hitting our screens and bookshelves twenty years ago, he quickly became one of the most influential figures in the food world, and has been one ever since. He has taught many of us essential skills over the years, especially through his establishment of River Cottage in 2004, an organic smallholding in the countryside of Dorset.
Given that Lofoten is ruled by the weather it might be unwise to say he and Val will be cooking up a storm but we’ve also invited Hugh to come and talk to us about our fragile natural world, the changes it faces and what we can do to nurture and sustain it. Holmen Lofoten is certainly the heartfelt hub in which we eat and share ideas among our analog cabins.

FISHING AND FORAGING – ANGELA HARTNETT
Angela is the UK’s best loved female chef, a relentless champion of restaurants, food and farming and generous host in her many restaurants through her sophisticated yet simple Italian inspired food.
At Holmen she’ll be joining us for foraging and fishing trips as well as cooking sumptuous feasts and hosting an up close demonstration. We can’t wait to see how she interprets the Lofoten larder. This one is going to be very fun; Angela’s quiet industry and radiant nature seeing the outside brought inside, her Italian side seeing that we are all fed properly with the seasonal understanding so implicit to Italian cookery. Wonderful to be with, wonderful to cook with, her food leaves one with nothing but a satisfied smile and perhaps an enthusiastic requirement for one last bedtime aquavit.
