Stuart Bale

Stu started his drinks career with collecting glasses in Glasgow, while at University studying dentistry. After leaving university prematurely and turning to bartending full time, Stu quickly fell in love with the drinks industry.

His understanding of the art behind cocktail-making saw him climb quickly through the ranks and earned Stu the credit needed to make the move to London in 2008, to join the team at Scottish restaurant and whisky bar Albannach.

His abilities quickly secured him a place at The Bar With No Name at 69 Colebrook Row, which opened in 2009 with Stu at the helm, working alongside cocktail guru Tony Conigliaro. It was here that Stu was really able to delve into the science of flavour, helping to build the bar’s now formidable reputation for pushing boundaries.

Stu’s work with Conigliaro caught the attention of creative agency and bar consultant Strange Hill. He joined the team in 2011, which gave him the opportunity to move from front of house to behind the scenes. In his role here he was able to develop new flavour concepts for some of the world’s most prestigious drinks brands, notably being one of the minds behind the three very limited edition Absolut Craft flavours, which took two years to come to fruition.

Stu’s own venture, Crucible, is focused on projects like this, and more. Founded in 2017, Stu’s now sought after as a bar consultant and to create new, exciting drinks concepts for his clients.
